I hadn't eaten taro for a very long long while, so it was fantastic when I heard that one of my neighbors(a very cooool neighbor) gave it to my mom. There are many ways to cook taro, but my parents and I chose to boil it. And after we boiled it, we peeled it and ate it with coconut sugar. It tasted like a potato but a little bit more starchy. Coconut sugar helped a lot.
