Our Pizza's had some issues last night so I asked Nathan one of the chef's at the Salisbury Arms for some tips. It seems lots of olive oil, strong flour, semolina and a very clean paddle are key.
Back to work after three weeks and it was bit of a shock but good to see everyone. A few surprises lurking in my email but nothing overly taxing.
