When the world hands you an Avocado, make Guacamole! Got this avocado from a food bank today. I took a Chipotle recipe and made some revisions...
1 ripe avocado
1 tbsp lime juice
1 tbsp cilantro (chopped)
2 tbsp Italian Olive Salad
2 tbsp of pickled peppers (jalapeno, habanero, ghost: your heat level) chopped
1/2 tsp kosher salt
1/2 tsp garlic salt
HOW TO DO IT:
- Choose the right avocado. It should feel squishy yet firm (like the palm of your hand), and be a nice dark green color on the inside.
- Cut the avocado in half and the remove the pit (carefully!)
- Scoop the avocado and place in a medium bowl.
- Toss and coat with lime juice.
- Add the salt and using a fork or potato masher, mash until a smooth consistency is achieved.
- Fold in the remaining ingredients (except the garlic salt) and mix well.
- Sprinkle the garlic salt over the guacamole and let sit in the fridge for at least a couple hours..
