I think a big factor is what lens you bring. A lens that takes pretty low-light portraits is what you want. Probably something that goes to f/2 or wider and produces attractive bokeh, strong background separation, and nice round dots of light. Flaring may be an issue that is hard to predict with some lenses, depending on its coatings and the angle of the light. You want the faraway objects (the sun and anything that would make your background busy otherwise) to be as out of focus as possible. It is technically possible to burn the inside of your camera if the direct sunlight is focused at a spot for too long, so keep that in mind.

For post-processing in Lightroom (assuming RAW), I brought the Highlights slider to the far left (almost all the way, I think--I'm not at home now) to bring out the shape of the sun's bokeh dot, and then I used the Whites slider to bring the center of the dot back up to full brightness. After that, I just improvised with exposure, contrast, shadows, vibrance etc. to get it looking right.
