purple daikon and red chard

An unusual purple daikon grown by my CSA farm (I have yet to see this at the supermarket). I chopped up the daikon to make some Do Chua, the Vietnamese daikon and carrots pickle. The purple leaches out and creates a translucent pink brine, and I think, such a pity, that the slices won't retain the tie-dye pattern forever.
