Red Velvet Muffins

Yesterday I got this fantastic 'The Complete Coconut Cookbook' from my friend and I made the first recipe today. It doesn't look good, but believe me - it tastes heavenly. 100% coconut. I'm so in love with this book, best present. <3
I'm obsessed with coconuts and although this book is for vegans, I'm sure I will modify it for myself. ;)
