WK Fan I found there is one special blue plastic tooling at the top of the knife to help you stay in the correct (15°) and constant angle for contact edge.... Very helpful!
By the way, how many number your hone (砥石) is? #1000? #6000 or higher? The surface of the stone looks really fine. :P

Satoshi T We call it 砥石 too :) I always use only # 1000. It will be the sharpness I desire in the shortest time.
